roasted cauliflower

There's not much to this recipe, it's more an idea which I only recently came buy - roasting cauliflower. This extends to just about any vegetable that wouldn't normally inspire us to turn on the oven, such as broccoli, and even string beans.

In this combination, I threw some courgette, a small head of cauliflower and a handful of new potatoes. Sprinkled with salt, pepper and a bit of olive oil, and baked in the oven at 180 C for 40 minutes.

If not roasting potatoes, you can reduce cooking time to 25 - 30 minutes, at the same temperature.



Extremely good.
