lazy apple pie

This is the traditional Serbian apple pie, but it can be made with cherries as well, and I suspect any other fruit.


250 g butter
250 g sugar
500 g flour
10 g baking powder
1 egg plus 2 egg yolks
2 tbsp creme fraiche
rind of one lemon

1.5 kg Granny Smith or Bramley apples
50 g butter
6 tbsp sugar
1 tsp cinnamon
a handful of walnuts

(if you are making cherry pie (or otherwise using fresh berries), sprinkle the pitted betrries with a couple of tablespoons of breadcrumbs and/or semolina for a better result).


First cook the apples. Peel and grate them and sauté with sugar and butter for about 15-20 minutes, until all the liquid evaporates and apples appear cooked. Allow it to cool. Then add the cinnamon and ground walnuts. Mix well. 

Sieve the flour and the baking powder. In a bowl, add all the other ingredients and mix with a spoon until the dough combines in a bowl. Minimally handle the dough with your hands.
When the consistency is good, divide the dough in two, and wrap each in cling film. Rest in the fridge for 20 minutes.

When you are ready, butter up and flour up your baking dish. Place each dough bowl between two adequately large pieces of cling film, and roll it out like that for minimal mess and perfect results every time.

Place one sheet of dough on the bottom of the baking dish, then cover evenly with the apple mixture. Cover with the second sheet of dough, and pierce it all over with a fork.

Bake in 180 C oven for 40 - 50 minutes or until golden on top and done. ?Enjoy warm or cold, with ice-cream, a bit of icing sugar or plain with a glass of milk or tea. Bon appetite!
