quick fritters


Absolutely lovely as a light meal or a snack, sweet or savoury.



Ingredients:
280g natural set yoghurt
2 eggs
10g baking powder
12 soup spoons plain flour
pinch of salt

Preparation:
Using a hand mixer, mix eggs, baking powder, yoghurt and salt until smooth. Add the flower and mix until you get a smooth homogenous batter.
Heat about an inch of vegetable oil in a small skillet and using a soup spoon, spoon the mixture into moderate but hot oil, making fritters. Fritters will puff up, turn them over after about a minute and then let it fry, turn occasionally and cook until you get a nice deep golden crust. Take out using a slotted spoon and let it drain on absorbent kitchen paper.

Dust with icing sugar for a sweet version, which you can eat on it's on or with jam, or leave as is and serve with savoury foods.
