angel cupcakes



These are really easy to make but will cheer up any party or a lazy weekend afternoon.



125g plain flour
250g sweetened condensed milk
85g butter
1 egg
1/2 tsp vanilla extract
1 1/2 tsp baking powder

for the icing:
200g icing sugar
55g softened butter
few drops vanilla extract
2-3 tbsp sweetened condensed milk

Preparation:

Preheat the oven to 180 C.

Sieve the flour into a large bowl. Add the condensed milk, baking powder, egg, chunks of softened butter, vanilla and the baking powder. Mix with a hand mixer until the batter is smooth.

Place cupcake baskets into the cupcake tray. Spoon equal amounts of batter into the cupcake baskets and bake for 20 minutes.
The cupcakes are ready when they feel soft but spongy. Take them out of the oven and allow to cool.

To make the icing, combine all the ingredients and mix with the electric mixer until smooth. Spoon into a  large sandwich bag, pierce a hole in the bottom and decorate each cupcake. Sprinkle with hundreds and thousands and serve.
