plum crumble

Crumbles are incredibly easy and tasty, and this one is my favourite.
I recently bought some ripe large plums, about 12 of them, and this was a perfect way to use them.



750 g plums or damsons
1 - 4 tbs sugar (depending how sweet the plums are; mine were perfectly ripe so I used only 1 tbs sugar)
a small knob of butter

for the crust
150 g flour
100 g butter
70 g caster sugar
50 g rolled oats
sprinkle of cinnamon


Preheat the oven to 180 C

Remove stones from the fruit and cut in quarter chunks. Melt the butter in the pan, add plums and sugar and let cook on medium heat for a few minutes, until just warmed through.
Pour into a dish you will cook the crumble in.

To make the crumble crust, melt the butter on medium heat (make sure it doesn't brown). Combine flour, sugar, oats and cinnamon and pour the butter over it. Using a fork, fluff up the mixture until all is soaked in butter but not stogy.
Cover the plums with crumble leaving it fluffy (do not pack down).

Bake in the oven for 30 - 35 minutes.


Serve warm with a bit of cream.
