Malibu pavlova

I usually make this when i have egg whites from making Tiramisu (the recepie for this next time), so we end up with two desserts :)



4 egg whites
1 cup icing sugar

1 tsp vailla concentrate
3 tsp cornflour
2 tsp white vinegar
250 ml whipping cream

Malibu fruit salad (recepie can be found in this post)

Mix egg whityes until peaks form. Add sugar and mix until you get dense, shiny merangue mix. To this, add cornflour, vanilla and vinegar, mixing still with a mixer.

Place the mix onto a baking paper placed on a flat baking tray and fashion a round pavlova, about 3 cm in thickness.

Bake in the oven preheated to 150 degrees. mine is fan assisted and it needs about 40 minutes (it needs to be crusty and lightly brown all over, well coooked but juicy on the inside).
Remove from the oven, peel away the baking paper and let it cool.

Whip the cream and place on top of the pavlova ad spread evenly. On that, place fruit salad, let it cool in the fridge for about an hour, cut in pieces and serve.
